Output interpretation
The percentage applies to the cucumbers and the water together, so 3.5% of 2000 g is 70 g of salt.
That single 70 g is about 4 tbsp plus 2 1/2 tsp of Morton coarse kosher, about 3 tbsp plus 2 3/4 tsp of fine table salt, and about 8 tbsp plus 1 tsp of Diamond Crystal kosher. Same salt weight, three very different scoops.
A warm room is the reason this example sits at the higher end of the usual range rather than at 2%.
What to check next
- Taste daily in a warm room and move the jar somewhere cooler if it races.
- Keep every piece under the brine, and discard the batch if anything fuzzy or off-smelling appears rather than salting it further.
- If you top up the jar later, mix the top-up brine at the same percentage instead of adding plain water.
